HOW TO MAKE MOI-MOI.
Moi-Moi is an african dish made with beans .It is very nutritous because of the high protein,iron
and dietry fiber content found in beans.Some people find it hard to eat beans because ( well visits to toilet) but
making beans into moi-moi can be a way to eat more of beans.
Ingredients.
beans(28.oz) or bean flour
red bell pepper(optional)
vegetable oil(5.oz or less)
salt
onion(1)
pepper(2) or black pepper
eggs(optional)
corned beef(optional)
maggie cube(sold in most food stores)
aluminium foil.
Recipe.
Soak beans in water for about an hours ,use your hand to squeeze gently until all the skins
are gone or ( you can simply use already made bean flour)while you doing that the eggs should be cooking.wash until all the
skins are invisible.put the washed beans in a blender and grind together with the red bell pepper and onion until it becomes
smooth without any trace of beans.set the stove and boil some water in a big pot and cover.cut the aluminium foil in squares
and fold each side so that liquid cannot escape from the foil.in a large bowl mix the beans with maggie,salt and vegetable
oil mixed until a smooth texture is achieved, add warm water till desired texture.start scooping the
mixture into the aluminium foil with the sliced eggs and corned beef and fold tightly into the pot .let it
cook for 1:15 minutes(cook longer if needed) but, be sure to check frequently for water and open them to check ,the moi-moi
should be ready when it show a little thickness.enjoy
